Description
Crunchy and rich homemade chocolate granola packed with rolled oats, cocoa powder, honey, coconut oil, ground flaxseed, and mini chocolate chips.
Ingredients
3 and 1/2 cups (300g) old-fashioned whole rolled oats (not quick or instant)
1/3 cup (28g) unsweetened natural cocoa powder
1/3 cup (40g) ground flaxseed (optional)
1/2 teaspoon salt
1/3 cup (78g) coconut oil
1/3 cup (113g) honey
1/4 cup (50g) packed light or dark brown sugar
1 teaspoon pure vanilla extract
1/3 cup (57g) semi-sweet mini chocolate chips
Instructions
1. Preheat oven to 300°F (150°C), line a baking sheet with parchment, and whisk oats, cocoa powder, ground flaxseed, and salt in a bowl.
2. Melt coconut oil, then whisk in honey, brown sugar, and vanilla extract until smooth.
3. Pour warm syrup over oats and stir until evenly coated.
4. Spread onto the sheet and press down firmly into a compact layer.
5. Bake for 30 to 35 minutes without stirring; cool completely on the pan for 45 minutes.
6. Scatter mini chocolate chips over top, break into large crunchy clusters, and serve.
Notes
Press firmly onto the pan and do not stir while baking for giant clusters. Cool completely before adding chocolate chips.
