Crispy zucchini fritters made with grated zucchini, Parmesan cheese, herbs, and seasonings for a golden skillet appetizer or side dish.
Ingredients
2 zucchinis grated
1 teaspoon salt
2 eggs
1/2 cup flour
1/3 cup Parmesan cheese
2 green onions chopped
2 cloves garlic minced
1/2 teaspoon black pepper
1/4 teaspoon paprika
2 to 3 tablespoons olive oil
Instructions
1. Salt zucchini and let sit.
2. Squeeze out moisture thoroughly.
3. Mix all ingredients together.
4. Heat oil in skillet.
5. Cook fritters until golden and crispy.
6. Drain and serve warm.
Notes
Remove excess moisture for crispy texture.
Serve immediately.
Reheat in air fryer for best results.
Great with garlic yogurt sauce.
