Description
Cilantro lime chicken served with fresh peach salsa made with ripe peaches, lime, cilantro, and spices. A fresh, healthy, and vibrant summer meal.
Ingredients
4 boneless skinless chicken breasts or thighs
3 ripe peaches, diced
1/2 red onion, finely chopped
1/2 red bell pepper, diced
1/4 cup fresh cilantro, chopped
2 tablespoons olive oil
2 limes, juiced
2 cloves garlic, minced
1 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon honey (optional)
Instructions
1. Mix lime juice, olive oil, garlic, and spices to marinate chicken.
2. Cook chicken in skillet until golden and cooked through.
3. Combine peaches, onion, bell pepper, cilantro, and honey for salsa.
4. Let salsa rest for flavors to blend.
5. Serve chicken topped with fresh peach salsa.
Notes
Best served fresh.
Grill chicken for extra flavor.
Do not over-mix salsa.
Store chicken and salsa separately.
