Description
Rich and creamy chocolate rice pudding made with white rice, milk, unsweetened cocoa, sweet raisins, butter, and vanilla.
Ingredients
¾ cup uncooked white rice
1 ¼ cups water
1 ½ cups milk
⅓ cup white sugar
1 teaspoon vanilla extract
⅓ cup raisins
1 tablespoon butter
2 tablespoons unsweetened cocoa
Instructions
1. Simmer rice and water in a covered saucepan over low heat for 15 minutes until tender.
2. Whisk cocoa powder with milk until smooth, then stir into cooked rice along with sugar.
3. Cook over medium-low heat for 10 to 12 minutes, stirring frequently, until thick and glossy.
4. Remove from heat and stir in raisins, butter, and vanilla extract until butter melts.
5. Let rest for 5 minutes off the heat to thicken into a velvety custard.
6. Spoon into bowls and serve warm or chilled.
Notes
Whisk cocoa into milk before adding to avoid clumps. Press plastic wrap directly onto pudding to prevent skin when chilling.
