Description
Elegant French chocolate pear tart with a buttery shortbread crust, melted dark chocolate layer, sliced pears, and a rich spiced cream custard.
Ingredients
Crust:
1 cup 2 sticks butter, at room temperature
½ cup sugar
1 egg
1 egg yolk
2 ⅔ cups all purpose flour
1–2 tablespoons heavy cream
Filling:
3 ounces quality semi-sweet or dark chocolate grated or finely chopped
4 ripe but firm pears
2 eggs
2 egg yolks
¾ cup sugar
1 teaspoon vanilla extract
¼ teaspoon cinnamon
1 ½ cups heavy cream
Topping:
1 ounce quality semi-sweet or dark chocolate grated or finely chopped
2 tablespoons heavy cream
Instructions
1. Beat softened butter and sugar, beat in egg and yolk, then fold in flour and cream; chill dough for 45 minutes.
2. Roll dough into an 11-inch tart pan, blind-bake with weights at 375°F (190°C) for 15 minutes.
3. Scatter 3 oz chopped chocolate over warm crust, then arrange peeled, cored, and sliced pears in concentric circles.
4. Whisk eggs, yolks, sugar, vanilla, cinnamon, and heavy cream until smooth; pour gently over pears.
5. Bake at 350°F (175°C) for 35 to 40 minutes until custard is set in the center.
6. Melt 1 oz chocolate with 2 tbsp heavy cream, drizzle over cooled tart, and serve.
Notes
Choose firm pears so slices hold shape. Blind-bake crust to keep pastry crisp.
