Description
Incredibly rich, fudgy, and chewy gluten-free brownies loaded with dark chocolate chips and sweet chopped dried figs, finished with a dust of icing sugar.
Ingredients
¾ cup reduced-fat spread
½ cup cocoa powder
¾ cup (6oz) castor sugar
2 eggs
¾ cup plus 2 tablespoons gluten-free self-raising flour
1oz dark chocolate chips
½ cup dried figs, chopped
2 teaspoons icing sugar, to dust
Instructions
1. Preheat oven to 350°F (175°C) and grease and line an 8-inch square brownie pan with parchment paper.
2. Melt ¾ cup reduced-fat spread and ½ cup cocoa powder together in a medium saucepan over low heat until smooth; remove from heat.
3. Stir in ¾ cup castor sugar, then add 2 eggs one at a time, whisking rapidly until glossy.
4. Fold in the gluten-free self-raising flour until the dry pockets disappear.
5. Gently stir in the dark chocolate chips and chopped dried figs until evenly distributed.
6. Pour into the prepared pan and bake for 20 to 22 minutes until the edges are set; cool completely and dust with icing sugar.
Notes
Do not overbake the brownies if you want a true fudgy center. Let the pan cool completely to room temperature before cutting to prevent crumbling.
