Description
An incredibly rich, fudgy, and chewy no-bake bar made with dried Turkish figs, toasted hazelnuts, and pumpkin seeds, finished with a smooth dark chocolate shell.
Ingredients
Fig Bars Base:
¾ cup raw hazelnuts (105g)
⅓ cup raw pumpkin seeds (50g)
1 cup chopped dried Turkish figs (150g)
1 Tbsp coconut oil (room temp)
pinch of salt
1 Tbsp water
Chocolate Coating:
¾ cup dark chocolate (4.5oz)
2 tsp coconut oil
flaked sea salt (optional)
Instructions
1. Toast raw hazelnuts and pumpkin seeds in a dry skillet over medium heat for 3-4 minutes until fragrant; cool completely.
2. Pulse the cooled nuts and seeds in a food processor until they form a coarse meal.
3. Add chopped dried Turkish figs, 1 Tbsp coconut oil, a pinch of salt, and 1 Tbsp water to the processor; blend until a sticky dough forms.
4. Press the fig mixture firmly and evenly into the bottom of a parchment-lined loaf pan.
5. Melt dark chocolate and 2 tsp coconut oil together in the microwave in 20-second bursts, stirring until completely smooth.
6. Pour the melted chocolate over the fig base, smooth the top, sprinkle with flaked sea salt if desired, and chill for 30 minutes until set.
Notes
If your dried figs are very firm, soak them in hot water for 5 minutes and drain thoroughly before processing. Store the finished bars in the refrigerator so the chocolate shell stays crisp.
