Description

Ultra-moist chocolate banana cupcakes made with sweet mashed bananas, cocoa powder, and a quick homemade buttermilk for a rich, tender treat.


Ingredients

¾ cup milk

1 Tablespoon vinegar

¼ cup vegetable oil

2 bananas, mashed

1 cup granulated sugar

1 teaspoon vanilla extract

1 egg

1¼ cup all-purpose flour

¼ cup cocoa powder

¾ teaspoon baking soda

½ teaspoon salt


Instructions

1. Preheat oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.

2. Mix ¾ cup milk and 1 tbsp vinegar in a cup; let sit for 5 minutes to curdle.

3. Mash bananas in a large bowl, then whisk in granulated sugar, vegetable oil, egg, vanilla extract, and milk mixture.

4. Sift all-purpose flour, cocoa powder, baking soda, and salt together in a medium bowl.

5. Whisk dry ingredients into wet ingredients just until a smooth batter forms.

6. Divide batter among 12 muffin cups and bake for 18 to 20 minutes until a toothpick comes out clean; cool completely on a wire rack.

Notes

Use very ripe bananas with dark spots for the best natural sweetness. Cool cupcakes completely on a wire rack before adding frosting.
