Description
Warm and juicy Cherry Crisp packed with dark sweet cherries, vanilla, almond extract, and a buttery cinnamon brown sugar rolled oat streusel.
Ingredients
Topping:
1/2 cup (100g) packed light or dark brown sugar
6 Tablespoons (46g) all-purpose flour
1/2 teaspoon ground cinnamon
6 Tablespoons (85g) unsalted butter, very cold and cubed
2/3 cup (57g) old-fashioned whole rolled oats
optional: 1/4 cup (about 20g) sliced almonds
Filling:
5 cups (575g) halved pitted dark sweet cherries*
1/2 cup (100g) granulated sugar
3 Tablespoons (21g) cornstarch
1 teaspoon pure vanilla extract
1/4 teaspoon almond extract
pinch of salt
Instructions
1. Preheat oven to 350°F (175°C), grease an 8×8-inch pan, and toss cherries, sugar, cornstarch, vanilla, almond extract, and salt.
2. Spread cherry mixture evenly across the bottom of the prepared baking dish.
3. Whisk brown sugar, flour, and cinnamon in a bowl; cut in very cold cubed butter until pea-sized clumps form.
4. Stir rolled oats and optional sliced almonds into the crumble mixture.
5. Scatter oat topping over cherry filling and bake for 40 to 45 minutes until golden brown and bubbly.
6. Rest for 15 minutes before serving warm with vanilla ice cream.
Notes
Keep butter very cold for a crisp topping. Do not thaw frozen cherries before tossing.
