Description
Soft and moist cherry coffee cake with a buttery crumb topping and sweet cherries baked into every bite.
Ingredients
2 cups flour
1 cup sugar
1/2 cup butter softened
2 eggs
1 cup milk
2 teaspoons baking powder
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 cups cherries
1/2 cup brown sugar
1/2 cup flour (topping)
1/4 cup cold butter
1/2 teaspoon cinnamon
1/2 cup powdered sugar (optional glaze)
1 to 2 tablespoons milk (optional glaze)
Instructions
1. Preheat oven to 350°F and grease baking pan.
2. Mix flour, baking powder, and salt.
3. Cream butter and sugar until fluffy.
4. Add eggs and vanilla.
5. Alternate adding dry ingredients and milk.
6. Fold in cherries.
7. Pour batter into pan.
8. Mix crumb topping until crumbly.
9. Sprinkle topping over batter.
10. Bake 40–45 minutes until golden.
11. Cool slightly before slicing.
12. Mix glaze and drizzle if desired.
Notes
Do not overmix batter.
Use frozen cherries without thawing for best texture.
Cool before slicing for clean cuts.
Add almond extract for bakery flavor.
