Decadent caramel pear cheesecake bars with a buttery shortbread crust, silky cheesecake layer, spiced Bartlett pears, crunchy oat crumble, and rich caramel drizzle.
Ingredients
Crust:
2 cups shortbread cookie crumbs
2 tablespoons granulated sugar
4 tablespoons butter melted
Cheesecake:
16 ounces whipped cream cheese
½ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
Pear Filling:
3 Bartlett pears peeled, cored, and finely chopped
2 tablespoons fresh lemon juice
½ cup light brown sugar
1 teaspoon vanilla extract
¼ teaspoon ground nutmeg
1 teaspoon ground cinnamon
1 ½ tablespoons cornstarch
Oatmeal Crumble:
1 cup 1-minute oatmeal
½ cup granulated sugar
½ cup light brown sugar
¼ teaspoon salt
½ teaspoon cinnamon
6 tablespoons cold butter diced
Toppings:
caramel sauce for drizzle
whipped cream optional
Instructions
1. Preheat oven to 350°F (175°C), line a 9×13-inch pan with parchment, mix cookie crumbs, 2 tbsp sugar, and melted butter; press into pan and bake for 10 minutes.
2. Beat whipped cream cheese, 1/2 cup granulated sugar, egg, and 1 tsp vanilla until smooth; spread over warm crust.
3. Toss finely chopped pears with lemon juice, 1/2 cup brown sugar, 1 tsp vanilla, nutmeg, 1 tsp cinnamon, and cornstarch.
4. Combine oatmeal, 1/2 cup sugar, 1/2 cup brown sugar, salt, and 1/2 tsp cinnamon; cut in cold diced butter until crumbly.
5. Layer fruit filling over cheesecake, top with oatmeal crumble, and bake for 30 to 35 minutes until golden brown.
6. Cool completely, chill in refrigerator for 3 hours, slice into bars, and drizzle with caramel sauce and optional whipped cream.
Notes
Chop pears finely for clean slicing. Chill for at least 3 hours before slicing and drizzling with caramel sauce.
