Description
A quick one-pan Caprese chicken gnocchi skillet made with juicy chicken, cherry tomatoes, mozzarella, basil, and tender gnocchi.
Ingredients
1 pound chicken breast diced
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
16 ounces potato gnocchi
2 cups cherry tomatoes halved
3 cloves garlic minced
1/4 cup chicken broth
8 ounces mozzarella pearls
1/4 cup fresh basil chopped
2 tablespoons balsamic glaze optional
Instructions
1. Season chicken.
2. Cook chicken until golden.
3. Remove and set aside.
4. Brown gnocchi.
5. Add tomatoes and garlic.
6. Pour in broth.
7. Return chicken.
8. Add mozzarella.
9. Cover until melted.
10. Top with basil and serve.
Notes
Use fresh mozzarella for best flavor.
Do not overcook gnocchi.
Add basil at the end.
Serve immediately while warm.
