Description
Melt-in-your-mouth Brown Sugar Shortbread Cookies featuring rich butter, caramelized brown sugar, vanilla, and a crunchy sparkling coarse sugar rim.
Ingredients
3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
1 cup (200g) packed light or dark brown sugar
1 and 1/2 teaspoons pure vanilla extract
2 and 1/4 cups (281g) all-purpose flour (spooned & leveled)
1/4 teaspoon salt
For Rolling:
1/2 cup (100g) coarse sugar (such as this or Sugar in the Raw)
Instructions
1. Beat softened butter and brown sugar on medium speed for 2 minutes until creamy, pale, and fluffy.
2. Mix in vanilla extract, then add flour and salt on low speed just until a soft dough forms.
3. Divide dough in half, shape each into an 8-inch smooth cylindrical log, wrap in plastic, and chill for at least 3 hours.
4. Preheat oven to 350°F (177°C) and line two baking sheets with parchment paper.
5. Roll chilled logs firmly in coarse sugar to coat the outside edge, then slice into 1/3-inch thick rounds.
6. Bake for 12 to 14 minutes until edges are lightly golden; cool on pan for 10 minutes, then transfer to a wire rack.
Notes
Chill logs for at least 3 hours for clean slicing. Rest cookies on the baking sheet for 10 minutes before moving.
