Description
Rich and chewy brown butter chocolate chip cookies featuring browned butter, brown sugar, cornstarch, and semi-sweet chocolate chips.
Ingredients
1 cup (16 Tbsp; 226g) unsalted butter
1/2 cup (100g) granulated sugar
1 cup (200g) packed light or dark brown sugar
1 large egg + 1 egg yolk, at room temperature
2 teaspoons pure vanilla extract
2 and 1/2 cups (313g) all-purpose flour (do not scoop; weigh or spoon & level)
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
2 Tablespoons (30ml) milk, warmed or at room temperature
1 and 1/2 cups (270g) semi-sweet chocolate chips
optional: flaky sea salt, for topping
Instructions
1. Melt 1 cup unsalted butter in a saucepan over medium heat, swirling constantly for 5 minutes until browned; cool.
2. Whisk cooled browned butter, 1/2 cup granulated sugar, and 1 cup brown sugar together in a large bowl.
3. Whisk in 1 egg + 1 egg yolk, 2 tsp vanilla extract, and 2 tbsp milk until combined.
4. Fold in 2 1/2 cups flour, 1 tsp cornstarch, 1 tsp baking soda, and 1/2 tsp salt.
5. Fold in 1 1/2 cups semi-sweet chocolate chips, chill dough for 1 hour, scoop onto sheets, and bake at 350°F (177°C) for 10-12 minutes.
6. Top with optional flaky sea salt, cool on baking pan for 10 minutes, and transfer to a wire rack.
Notes
Brown butter on low heat to prevent burning. Chill dough 1 hour for thick, chewy cookies.
