Fluffy blueberry shortcake made with tender biscuits, sweet blueberries, and whipped cream.
Ingredients
2 cups flour
1/4 cup sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter
3/4 cup milk
1 teaspoon vanilla
2 cups blueberries
1/4 cup sugar
1 tablespoon lemon juice
1 cup heavy cream
2 tablespoons powdered sugar
Instructions
1. Mix dry ingredients.
2. Cut in butter.
3. Add milk and vanilla.
4. Bake biscuits.
5. Mix blueberries with sugar and lemon.
6. Whip cream.
7. Assemble shortcake.
8. Serve.
Notes
Serve fresh for best texture.
Use ripe blueberries.
Do not overmix biscuit dough.
