Description

Flaky homemade blueberry pop tarts filled with sweet blueberry filling and topped with vanilla glaze.


Ingredients

Scale

2 pie crusts

1 egg beaten

1 1/2 cups blueberries

1/4 cup granulated sugar

1 tablespoon cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract


Instructions

1. Cook blueberries, sugar, cornstarch, lemon juice, and vanilla until thickened.

2. Cool filling completely.

3. Cut pastry into rectangles.

4. Add filling to half the rectangles.

5. Top with remaining pastry and seal edges.

6. Brush with egg wash.

7. Bake until golden brown.

8. Cool completely.

9. Mix glaze and drizzle over pop tarts.

Notes

Cool filling before assembling.

Do not overfill pastries.

Store in airtight container.

Freeze for longer storage.
