Description

Moist and tender Berry Upside Down Cake featuring mixed blueberries, blackberries, and strawberries baked under a rich Greek yogurt yellow cake.


Ingredients

Scale

1 cup fresh or frozen blueberries

1 cup fresh or frozen blackberries

1 cup fresh sliced strawberries

¼ cup granulated sugar

1 3 ounce box raspberry gelatin

1 15.25 ounce box yellow cake mix

¾ cup water

⅓ cup vegetable oil

3 large eggs

1/2 cup plain Greek yogurt


Instructions

1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.

2. Scatter blueberries, blackberries, and sliced strawberries evenly across the bottom of the pan.

3. Sprinkle granulated sugar and raspberry gelatin evenly over the fruit layer.

4. Beat yellow cake mix, water, vegetable oil, eggs, and Greek yogurt for 2 minutes until smooth.

5. Spread batter gently over berries and bake for 35 to 40 minutes until a toothpick comes out clean.

6. Cool for 10 minutes, invert onto a serving platter, and serve warm.

Notes

Do not thaw frozen berries. Invert after exactly 10 minutes of cooling for a clean release.
