Light vanilla layer cake filled with Chantilly cream frosting and fresh mixed berries for an elegant dessert.
Ingredients
2 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter
1 3/4 cups granulated sugar
4 eggs
1 tablespoon vanilla extract
1 cup buttermilk
8 oz mascarpone cheese
8 oz cream cheese
2 cups heavy whipping cream
1 cup powdered sugar
2 teaspoons vanilla extract
2 cups strawberries
1 cup blueberries
1 cup raspberries
1 tablespoon lemon juice
Instructions
1. Prepare cake batter.
2. Bake cake layers.
3. Cool completely.
4. Prepare Chantilly frosting.
5. Toss berries with lemon juice.
6. Layer cake with frosting and berries.
7. Frost cake exterior.
8. Decorate with fresh berries.
9. Chill before serving.
Notes
Use fresh berries for best results.
Keep cake refrigerated.
Chill before slicing.
