Description
Soft and fluffy baked apple cider donuts made with concentrated apple cider and coated in warm butter and cinnamon sugar.
Ingredients
Donut Batter:
1 and 1/2 cups (360ml) apple cider
2 cups (250g) all-purpose flour (spooned & leveled)*
1 teaspoon baking soda
3/4 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon apple pie spice*
1/4 teaspoon salt
2 Tablespoons (28g) unsalted butter, melted
1 large egg, at room temperature
1/2 cup (100g) packed light or dark brown sugar
1/2 cup (100g) granulated sugar
1/2 cup (120ml) milk, at room temperature*
1 teaspoon pure vanilla extract
Topping:
1 cup (200g) granulated sugar
3/4 teaspoon ground cinnamon
3/4 teaspoon apple pie spice*
6 Tablespoons (85g) unsalted butter, melted
Instructions
1. Simmer apple cider in a saucepan over medium heat for 15-20 minutes until reduced to 1/2 cup; cool.
2. Preheat oven to 350°F (177°C) and grease two 6-cavity donut pans.
3. Whisk flour, baking soda, baking powder, 1 tsp cinnamon, 1 tsp apple pie spice, and salt in a bowl.
4. Whisk 2 tbsp melted butter, egg, brown sugar, granulated sugar, milk, vanilla, and reduced cider in a separate bowl.
5. Combine wet and dry ingredients, pipe into donut cavities 3/4 full, and bake for 10 to 11 minutes.
6. Dip warm donuts in 6 tbsp melted butter and coat thoroughly in 1 cup granulated sugar, 3/4 tsp cinnamon, and 3/4 tsp apple pie spice.
Notes
Reduce cider to 1/2 cup for concentrated flavor. Dip donuts in sugar topping while still warm.
