Fresh avocado summer rolls made with rice paper, crisp vegetables, herbs, and creamy avocado served with a flavorful peanut dipping sauce.
Ingredients
8 rice paper wrappers
1 ripe avocado, sliced
1 cup shredded carrots
1 cup cucumber, julienned
1 cup red bell pepper, sliced
1 cup purple cabbage, shredded
1/2 cup fresh mint leaves
1/2 cup fresh cilantro leaves
1/2 cup cooked rice noodles (optional)
1/4 cup peanut butter
2 tablespoons soy sauce
1 tablespoon lime juice
1 teaspoon honey
1–2 tablespoons warm water
Instructions
1. Soak rice paper until soft.
2. Place vegetables, avocado, and herbs inside.
3. Roll tightly like a burrito.
4. Repeat with remaining wrappers.
5. Mix sauce ingredients and serve.
Notes
Do not over-soak rice paper.
Roll gently to avoid tearing.
Serve fresh for best texture.
Store wrapped with damp towel.
