Description
Soft and chewy Apple Pie Cookies rolled in cinnamon sugar, filled with stovetop spiced apples, and drizzled with caramel and graham crackers.
Ingredients
For the Apple Filling:
2 medium Honeycrisp, Pink Lady, Granny Smith, or Fuji apples ( peeled, cored, and finely diced)
2 Tbsp. lemon juice (fresh)
1/2 cup water
1/4 cup dark brown sugar (packed)
1/4 cup granulated white sugar
1 Tbsp. cornstarch
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
2 tsp. unsalted Butter
For the Cookies:
1 cup unsalted butter (softened to room temperature)
1¼ cups granulated sugar
1/4 cup dark brown sugar (packed)
1 egg and 1 egg yolk (room temperature)
1 Tbsp. vanilla extract
3 cups all-purpose flour (spooned and leveled)
2 tsp. cornstarch
1 tsp. ground cinnamon
1 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. fine sea salt
For Rolling:
1/4 cup granulated sugar
1/2 tsp. ground cinnamon
Garnish:
caramel and crushed cinnamon graham crackers

Instructions
1. Simmer diced apples, lemon juice, water, sugars, cornstarch, cinnamon, nutmeg, cloves, and butter in a saucepan for 6 to 8 minutes until thick; cool.
2. Whisk flour, cornstarch, cinnamon, baking powder, baking soda, and sea salt in a bowl.
3. Beat softened butter and sugars for 2 minutes, then beat in egg, egg yolk, and vanilla extract.
4. Fold dry ingredients into creamed butter, scoop 2-tablespoon balls, and roll in cinnamon sugar mixture.
5. Press an indentation into each ball on lined baking sheets and spoon cooled apple filling into wells.
6. Bake at 350°F (175°C) for 12 to 14 minutes, cool on a wire rack, drizzle with caramel, garnish with crushed graham crackers, and serve.
Notes
Dice apples finely so filling fits neatly in cookies. Cool filling completely before assembling.
