Description
Fluffy and tender apple pear muffins made with fresh caramelized apples, juicy pears, melted butter, and warm cinnamon.
Ingredients
For apples and pears:
2 apples
2 pears
10 g butter
10 g sugar
1 pinch of cinnamon
For the muffin batter:
3 eggs
100 g of flour
50 g of sugar
5 g of baking powder
60 g butter melted
5 g sugar
1 teaspoon of cinnamon
Instructions
1. Sauté diced apples and pears in 10 g melted butter, 10 g sugar, and a pinch of cinnamon for 5 to 6 minutes; cool completely.
2. Preheat oven to 350°F (175°C), line a muffin pan, and whisk eggs and 50 g sugar until pale and frothy.
3. Sift in flour, baking powder, and 1 tsp cinnamon; fold into egg mixture along with 60 g melted butter until smooth.
4. Gently fold two-thirds of the sautéed fruit into the batter.
5. Divide batter into muffin cups, top with remaining sautéed fruit, and sprinkle with 5 g sugar.
6. Bake for 20 to 25 minutes until golden brown; cool on a wire rack before serving.
Notes
Sauté fruit lightly to remove excess moisture. Whisk eggs and sugar well for a light crumb.
