Description
Chewy and spiced apple crumble oatmeal bars with a buttery rolled oat crust, tender cinnamon apples, and a crisp streusel topping.
Ingredients
For The Crumb Layers:
1 and 1/4 cup all-purpose flour, spooned & leveled
1 cup old-fashioned rolled oats, not quick oats or instant oats
1 teaspoon cinnamon
1/4 teaspoon salt
2/3 cup melted butter, cooled to room temperature
3/4 cup brown sugar, packed
1 teaspoon vanilla
1 large egg yolk
1 tablespoon flour
1 tablespoon brown sugar
For the Apple Layer:
2 large apples, cored, pealed and sliced about 1/4 inch thick
1 tablespoon granulated sugar
1 teaspoon cinnamon
1/4 teaspoon ground nutmeg
2 teaspoons cornstarch
Instructions
1. Preheat oven to 350°F (175°C) and line an 8×8-inch pan with parchment paper.
2. Mix 1 1/4 cups flour, rolled oats, 1 tsp cinnamon, salt, melted butter, 3/4 cup brown sugar, vanilla, and egg yolk until crumbly.
3. Press two-thirds of the mixture into the pan and bake for 10 minutes to pre-set crust.
4. Toss sliced apples with granulated sugar, 1 tsp cinnamon, nutmeg, and cornstarch in a bowl.
5. Mix remaining crumb dough with 1 tbsp flour and 1 tbsp brown sugar; layer apples over crust and top with streusel.
6. Bake at 350°F for 30 to 35 minutes until bubbly, cool completely, chill for 30 minutes, and slice.
Notes
Pre-bake bottom crust 10 minutes to prevent sogginess. Cool completely before slicing.
