Description
Chewy oatmeal cookie cups filled with cinnamon-spiced Granny Smith apples and drizzled with sweet caramel sauce.
Ingredients
Cooking spray
1 cup (2 sticks) butter, softened (plus more for cooking apples)
1 1/4 cups brown sugar (divided)
3/4 cup granulated sugar (divided)
2 large eggs
1 tsp. pure vanilla extract
1 1/4 cups all-purpose flour
1 3/4 cups rolled oats
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. kosher salt
4 Granny Smith apples, peeled, cored and finely chopped
1 1/2 tsp. cornstarch
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
Caramel sauce, for serving
Instructions
1. Preheat oven to 350°F (175°C) and coat a 12-cup muffin pan with cooking spray.
2. Beat 1 cup softened butter, 1 cup brown sugar, and 1/2 cup granulated sugar until fluffy; beat in eggs and vanilla.
3. Stir in flour, rolled oats, baking powder, 1/2 tsp cinnamon, and salt to form cookie dough.
4. Scoop dough into muffin cups, press centers down, and bake for 12 to 15 minutes; re-press centers while warm.
5. Sauté chopped apples in a skillet with butter, 1/4 cup brown sugar, 1/4 cup granulated sugar, cornstarch, nutmeg, and 1/2 tsp cinnamon until tender.
6. Spoon warm apple filling into cooled cookie cups, drizzle with caramel sauce, and serve.
Notes
Press cookie cup centers down immediately after removing from oven. Grease muffin pan well for easy release.
