Description
An old-fashioned apple cobbler featuring tender spiced apples simmered with cinnamon and nutmeg, baked under a sweet golden batter crust.
Ingredients
Spiced Fruit Layer:
6 medium apples (Granny Smith, Golden Delicious, or other good baking apple), peeled and sliced ¼ inch thick
1 cup water, or apple juice
1/3 cup brown sugar, packed
1 Tablespoon cornstarch
1 Tablespoon lemon juice
1/2 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
Golden Batter:
1 cup all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup milk
5 Tablespoons butter, melted
ground cinnamon for topping
Instructions
1. Preheat oven to 350°F (175°C).
2. Simmer sliced apples, water/juice, brown sugar, cornstarch, lemon juice, vanilla, 1 tsp cinnamon, nutmeg, and 1/8 tsp salt in a skillet for 5 minutes.
3. Pour 5 tbsp melted butter into the bottom of a 2-quart baking dish.
4. Whisk flour, granulated sugar, baking powder, and 1/4 tsp salt in a bowl, then stir in milk until smooth; pour batter over melted butter without stirring.
5. Spoon warm apple mixture and juices over the batter without stirring.
6. Dust top with ground cinnamon and bake for 35 to 40 minutes until golden brown; cool 10 minutes before serving.
Notes
Do not stir the layers together after pouring; the batter will rise around the fruit as it bakes. Use firm baking apples so slices stay tender.
