Description
Soft and gooey apple cinnamon rolls filled with fresh chopped apples, brown sugar, and cinnamon, topped with vanilla caramel icing.
Ingredients
Dough:
1 cup (240ml) whole milk, warmed to about 100°F (38°C)
2/3 cup (135g) granulated sugar, divided
1 and 1/2 Tablespoons (14g) Platinum Yeast from Red Star (2 standard–size packets)*
1/2 cup (113g) unsalted butter, softened to room temperature and cut into 4 pieces
2 large eggs, at room temperature
1/2 teaspoon salt
4 and 1/2 cups (563g) all-purpose flour or bread flour (spoon & leveled), plus more as needed
Filling:
6 Tablespoons (85g) unsalted butter, softened to room temperature
1/2 cup (100g) packed light or dark brown sugar
1 and 1/2 Tablespoons ground cinnamon
2 cups (250g) peeled chopped apples (about 2 medium apples)
Icing:
1 cup (120g) confectioners’ sugar
1/2 teaspoon pure vanilla extract
2 Tablespoons milk
2 Tablespoons warmed salted caramel
Instructions
1. Whisk warmed whole milk, 1 tbsp granulated sugar, and yeast in a bowl; let sit 5 minutes to activate.
2. Beat in remaining sugar, 1/2 cup softened butter, eggs, salt, and flour; knead 5 minutes and let rise 1 hour.
3. Roll dough into a 12×18-inch rectangle, spread 6 tbsp softened butter, and sprinkle brown sugar, cinnamon, and chopped apples.
4. Roll into a tight log, slice into 12 rolls, place in a 9×13 pan, and let rise 45 minutes.
5. Bake at 350°F (177°C) for 25 to 28 minutes until lightly golden brown.
6. Whisk confectioners’ sugar, vanilla, milk, and 2 tbsp warmed salted caramel; drizzle over warm rolls.
Notes
Keep milk around 100°F to activate yeast properly. Dice apples small for easy rolling.
