Description
A decadent apple cheesecake featuring a pecan graham crust, rich cream cheese filling, and cinnamon-spiced sliced apples with pecans on top.
Ingredients
Crust:
1 cup graham cracker crumbs
½ cup finely chopped pecans
¼ cup unsalted butter, melted
3 tablespoons white sugar
½ teaspoon ground cinnamon
Filling:
2 (8 ounce) packages cream cheese, softened
½ cup white sugar
2 large eggs
½ teaspoon vanilla extract
Topping:
4 cups apples – peeled, cored and thinly sliced
⅓ cup white sugar
½ teaspoon ground cinnamon
¼ cup chopped pecans
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
2. Combine graham cracker crumbs, finely chopped pecans, melted butter, 3 tbsp white sugar, and ½ tsp cinnamon; press into pan bottom.
3. Beat softened cream cheese and ½ cup white sugar until smooth; beat in eggs one at a time and stir in vanilla extract.
4. Pour filling over crust layer.
5. Toss sliced apples with ⅓ cup white sugar and ½ tsp cinnamon; spoon over filling and scatter ¼ cup chopped pecans on top.
6. Bake for 60 to 70 minutes until set; cool to room temperature and chill at least 4 hours before serving.
Notes
Softened cream cheese prevents lumps in the filling. Chill at least 4 hours for clean slicing.
