Description

This creamy Zucchini Gratin features thinly sliced zucchini baked in a rich, cheesy sauce with a crispy golden topping. It’s a delicious side dish that highlights the best of summer produce.


Ingredients

4 medium zucchinis, thinly sliced

2 tablespoons butter

2 tablespoons all-purpose flour

1 cup milk

1/2 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup breadcrumbs


Instructions

1. Preheat the oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.

2. Melt butter in a saucepan over medium heat. Add flour and whisk for 1 minute to form a roux.

3. Slowly pour in milk and heavy cream, whisking constantly until smooth and thickened.

4. Stir in cheddar cheese, Parmesan, garlic powder, salt, and pepper until melted and creamy.

5. Arrange half of the zucchini slices in the prepared baking dish.

6. Pour half of the cheese sauce over the zucchini, then layer the remaining zucchini and top with the rest of the sauce.

7. Sprinkle breadcrumbs over the top for a crispy finish.

8. Bake for 25–30 minutes, or until golden and bubbling.

9. Let cool for 5 minutes before serving.

Notes

Use a mandoline slicer for even zucchini slices.

Add a sprinkle of mozzarella or Gruyère for extra richness.

For a lighter version, use half-and-half instead of cream.
