Description

A colorful, refreshing salad made with citrus fruits, avocado, and a honey-lemon dressing, perfect for winter.


Ingredients

2 navel oranges, peeled and sliced

1 grapefruit, peeled and sliced

1 blood orange, peeled and sliced (optional)

1 avocado, sliced

¼ cup pomegranate seeds

¼ cup thinly sliced red onion

2 cups baby arugula or mixed greens

¼ cup crumbled feta or goat cheese

¼ cup toasted pecans or walnuts

3 tablespoons olive oil

1 tablespoon honey

1 tablespoon lemon juice

1 tablespoon orange juice

1 teaspoon Dijon mustard

Salt and black pepper to taste


Instructions

1. Whisk together dressing ingredients.

2. Arrange greens on platter.

3. Layer citrus and avocado.

4. Add toppings and drizzle dressing before serving.
