Ingredients
10 cups cubed day-old bread
3 tablespoons unsalted butter
2 tablespoons olive oil
1 large onion, diced
3 celery stalks, diced
4 cups mixed wild mushrooms, sliced
2 cloves garlic, minced
1 cup roasted chestnuts, chopped
1 teaspoon dried thyme
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon salt
½ teaspoon black pepper
2 ½ cups vegetable broth
2 large eggs, lightly beaten
2 tablespoons chopped parsley
Instructions
1. Preheat the oven to 350°F and lightly grease a baking dish.
2. Spread the cubed bread onto a baking sheet and toast it in the oven for 10 minutes or until lightly crisp.
3. Heat the butter and olive oil in a large skillet over medium heat.
4. Add the onion and celery and cook until soft and fragrant.

11. Whisk the eggs and stir them into the stuffing mixture.

14. Remove the foil and bake for an additional 20 minutes or until the top is golden and crisp.
15. Sprinkle with chopped parsley before serving.
