Ingredients
2 tablespoons olive oil
1 onion, chopped
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon dried oregano
4 cups vegetable broth
2 cans (15 oz each) white beans, rinsed
3 cups chopped kale
1 cup diced tomatoes (optional)
Salt and pepper to taste
1 tablespoon lemon juice
Instructions
1. Heat olive oil in a pot and sauté onion, carrots, and celery.
2. Add garlic, thyme, and oregano. Cook for 1 minute.
3. Pour in broth and add beans. Simmer 10 minutes.
4. Add kale and tomatoes. Cook until kale is tender.
5. Season with salt, pepper, and lemon juice. Serve warm.
Notes
Mash some beans for a creamier texture.
