Description
Tropical Coconut Lime Bars feature a buttery crust topped with creamy coconut lime filling.
Ingredients
1 1/2 cups all-purpose flour
1/2 cup powdered sugar
3/4 cup unsalted butter, cold and cubed
1/4 teaspoon salt
1 cup granulated sugar
2 tablespoons all-purpose flour
4 large eggs
2/3 cup fresh lime juice
1 tablespoon lime zest
1 cup full-fat coconut milk
1 cup sweetened shredded coconut
Instructions
1. Preheat oven to 350°F and line pan
2. Mix crust ingredients and press into pan
3. Bake crust until lightly golden
4. Whisk sugar and flour, then add eggs
5. Add lime juice, zest, and coconut milk
6. Stir in shredded coconut
7. Pour filling over crust
8. Bake until set
9. Cool and refrigerate before slicing
Notes
Chill fully for clean slices.
Use fresh lime juice for best flavor.
Dust with powdered sugar before serving.
