Ingredients
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
Zest of 1 orange
Zest of 1 lemon
Zest of 1 lime
1 tablespoon fresh orange juice
1 tablespoon fresh lemon juice
1 tablespoon fresh lime juice
Optional topping: extra granulated sugar
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Whisk together flour, baking soda, and salt; set aside.
3. Beat butter and sugar until light and fluffy.
4. Add eggs one at a time, mixing well after each.
5. Stir in vanilla extract, citrus zests, and juices until evenly incorporated.
6. Gradually fold in flour mixture until just combined.
7. Scoop dough into 1 ½ tablespoon-sized balls, spacing 2 inches apart on baking sheets.
8. Optional: roll tops of cookies in extra sugar.
9. Bake for 10–12 minutes until edges are lightly golden and centers remain soft.
10. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
Use Meyer lemons for a sweeter flavor.
Add white chocolate or citrus chocolate chips for variation.
Chill dough for 30 minutes before baking for extra softness.
Swap lime zest for grapefruit zest for a unique twist.
