Ingredients
8 ounces mascarpone cheese, softened
1 cup heavy cream
1 teaspoon vanilla extract
1/4 cup powdered sugar
12 ladyfinger cookies, finely crushed
1/4 cup strong brewed coffee, cooled
Cocoa powder, for dusting
Dark chocolate, for dipping (optional)
Instructions
1. Whisk mascarpone, heavy cream, vanilla extract, and powdered sugar until smooth and slightly thickened.
2. Combine crushed ladyfingers with cooled coffee until evenly moistened.
3. Fold coffee-soaked crumbs into mascarpone mixture until creamy and uniform.
4. Cover and refrigerate mixture for at least 1 hour to firm up.
5. Roll mixture into 1-inch balls; optionally dip in melted dark chocolate.
6. Coat truffles in cocoa powder or crushed nuts/chocolate shavings.
7. Place on parchment-lined tray and refrigerate until ready to serve.
Notes
Chill truffles for at least 1 hour for easier rolling.
Omit alcohol for an alcohol-free version.
Try rolling in crushed cookies, chocolate chips, or toasted coconut for variety.
