Ingredients
Cake:
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter
1 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
3/4 cup milk
Espresso Soak:
3/4 cup brewed espresso
2 tablespoons sugar
Mascarpone Cream:
8 ounces mascarpone cheese
1 cup heavy cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
Topping:
Unsweetened cocoa powder
Instructions
1. Preheat oven to 350°F and prepare pans.
2. Whisk dry ingredients.
3. Cream butter and sugar until fluffy.
4. Add eggs and vanilla.
5. Alternate dry ingredients and milk.
6. Bake cake layers and cool.
7. Brush layers with espresso soak.
8. Whip cream to soft peaks.
9. Mix mascarpone, sugar, and vanilla.
10. Fold whipped cream into mascarpone.
11. Assemble cake and dust with cocoa.
Notes
Use room-temperature mascarpone.
Do not overmix filling.
Chill cake before slicing.
Serve slightly chilled.
