Ingredients
1 cup unsalted butter, melted
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup cocoa powder
1/2 teaspoon salt
1 teaspoon instant espresso powder
1 cup mascarpone cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract (for mascarpone layer)
Cocoa powder, for dusting
Instructions
1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
2. In a large bowl, combine melted butter and sugar. Add eggs and vanilla, mixing until smooth.
3. Sift in flour, cocoa powder, salt, and espresso powder. Stir until just combined.
4. Pour batter into prepared pan and bake for 25–30 minutes, or until a toothpick inserted comes out with a few moist crumbs. Let cool completely.
5. In a bowl, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
6. Spread mascarpone mixture evenly over cooled brownies. Dust with cocoa powder using a fine sieve.
7. Refrigerate for at least 1 hour before slicing into squares. Serve chilled or at room temperature.
Notes
Adjust espresso powder for a stronger or milder coffee flavor.
Add melted chocolate drizzle on top for extra indulgence.
Use cream cheese as a substitute for mascarpone if desired.
