Hearty Three Bean Meatless Chili made with pantry staples, vegetables, and bold spices.


Ingredients

Scale

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1 can kidney beans, drained

1 can black beans, drained

1 can pinto beans, drained

1 can diced tomatoes

1 can tomato sauce

1 cup vegetable broth


Instructions

1. Heat oil and cook onion until soft.

2. Add garlic and bell peppers.

3. Stir in spices.

4. Add beans, tomatoes, sauce, and broth.

5. Bring to a boil.

6. Simmer 25–30 minutes.

7. Adjust seasoning and serve.

Notes

Mash beans to thicken.

Add vegetables for variety.

Adjust spice level to taste.
