Description

Ingredients
1 cup yellow cornmeal
1 cup all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
2 large eggs
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
Instructions
1. Preheat oven to 375°F and line a 12-cup muffin pan.
2. Whisk cornmeal, flour, sugar, baking powder, and salt.
3. Whisk milk, eggs, melted butter, and vanilla.
4. Combine wet and dry ingredients until just mixed.
5. Divide batter evenly into muffin cups.
6. Bake 15–18 minutes until golden and cooked through.
7. Cool slightly before serving.
Notes
Replace half the milk with buttermilk for richer flavor.
Add honey for extra sweetness.
Mix in shredded cheddar for savory muffins.
Brush warm muffins with melted butter.
