Sweet Potato Pilaf

Description

A warm and fragrant Sweet Potato Pilaf made with tender basmati rice, golden sweet potatoes, caramelized onions, and aromatic spices. A nourishing side dish or a complete vegetarian meal.


Ingredients

2 cups basmati rice rinsed

2 medium sweet potatoes peeled and diced small

1 medium onion finely chopped

2 garlic cloves minced

1 tablespoon fresh ginger grated

3 tablespoons olive oil

1 1/2 teaspoons ground cumin

1 teaspoon ground turmeric

1 teaspoon smoked paprika

3 1/2 cups vegetable broth

Salt to taste

Black pepper to taste

1/3 cup chopped parsley

1/4 cup toasted almonds optional


Instructions

1. Heat olive oil in a large pot over medium heat and sauté onions until soft.

2. Stir in garlic and ginger, cooking for 1 minute.

3. Add cumin, turmeric, and smoked paprika and cook 30 seconds.

4. Stir in diced sweet potatoes and cook 3 minutes.

5. Add rice, salt, pepper, and broth. Stir well.

6. Bring to a gentle boil, cover, and reduce heat to low.

7. Simmer 16 to 18 minutes or until rice is tender and liquid absorbed.

8. Remove from heat and rest covered 5 minutes.

9. Fluff gently with a fork and stir in fresh parsley and toasted almonds if using.

10. Serve warm as a side dish or a complete vegetarian meal.

Notes

Use low-sodium broth if preferred.

Replace almonds with roasted cashews if desired.

Pairs well with roasted chicken, grilled vegetables, or salads.
