Description

Ingredients

2 cups crushed pineapple, drained

2 cups powdered sugar

2 cups desiccated coconut, divided

1 tablespoon lemon juice

1 teaspoon vanilla extract

Pinch of salt


Instructions

1. Drain the crushed pineapple well and place in a mixing bowl.

2. Add powdered sugar, lemon juice, vanilla extract, and a pinch of salt. Mix until smooth.

3. Roll the mixture into small 1-inch balls using your hands.

4. Spread 1 ½ cups of desiccated coconut on a plate.

5. Roll each pineapple ball in coconut until fully coated.

6. Place the coated balls on a tray lined with parchment paper.

7. Chill in the refrigerator for at least 30 minutes to firm up before serving.
