Description

This Sugar Snap Pea Salad delivers crisp texture and bright flavor in every bite. Fresh sugar snap peas, radishes, herbs, and feta combine with a light lemon dressing for a refreshing spring or summer side dish. It takes only 15 minutes to prepare and pairs perfectly with grilled mains or picnic spreads.


Ingredients

2 cups fresh sugar snap peas, trimmed

1 cup radishes, thinly sliced

1/3 cup feta cheese, crumbled

2 tablespoons red onion, finely chopped

2 tablespoons fresh parsley or dill, chopped

2 tablespoons olive oil

1 tablespoon fresh lemon juice

1 teaspoon honey

1/4 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and trim the sugar snap peas. Slice them diagonally into halves.

2. Thinly slice the radishes and finely chop the red onion and herbs.

3. Whisk olive oil, lemon juice, honey, salt, and black pepper in a small bowl.

4. Place sugar snap peas, radishes, red onion, and herbs in a large bowl.

5. Pour the dressing over the vegetables and toss gently until coated.

6. Sprinkle feta cheese on top and serve immediately or chill briefly before serving.

Notes

Use very fresh sugar snap peas for maximum sweetness and crunch.

Blanch snap peas for 1 minute if you prefer a softer texture.

Store dressing separately if preparing ahead.

Freezing is not recommended because the vegetables lose their crisp texture.
