Stuffed Chicken Breast with Cranberries and Goat Cheese

Description

Juicy chicken breasts stuffed with creamy goat cheese, dried cranberries, and fresh herbs, baked until golden and tender. A festive and elegant dinner recipe.


Ingredients

4 boneless, skinless chicken breasts

1/2 cup goat cheese, softened

1/3 cup dried cranberries, chopped

1 tablespoon fresh parsley, chopped

1 tablespoon fresh thyme leaves

2 tablespoons olive oil

Salt and black pepper to taste


Instructions

1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.

2. Cut a pocket into each chicken breast, being careful not to cut all the way through.

3. In a bowl, combine goat cheese, cranberries, parsley, and thyme until well mixed.

4. Stuff each chicken breast with the cheese mixture and secure with toothpicks.

5. Brush chicken with olive oil, season with salt and pepper.

6. Bake for 25–30 minutes until chicken is cooked through (internal temp 165°F/74°C).

7. Remove toothpicks before serving.

Notes

You can substitute feta cheese for goat cheese if desired.

For extra flavor, add a touch of orange zest to the stuffing.
