Ingredients
2 lb beef tenderloin, trimmed
Salt and pepper to taste
2 tablespoons olive oil
1/2 cup cream cheese, softened
1/4 cup grated Parmesan cheese
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh rosemary, chopped
1 teaspoon Dijon mustard
1/2 teaspoon paprika
Kitchen twine for tying
Optional: roasted vegetables for serving
Instructions
1. Preheat oven to 400°F.
2. Slice beef tenderloin lengthwise to create a pocket.
3. Combine cream cheese, Parmesan, garlic, parsley, rosemary, Dijon mustard, salt, and pepper; mix until smooth.
4. Spread filling inside tenderloin; roll and secure with kitchen twine.
5. Rub outside with olive oil, salt, pepper, and paprika.
6. Roast 25–30 minutes until internal temperature reaches 130°F for medium-rare.
7. Remove from oven; cover and rest 10 minutes.
8. Slice and serve with roasted vegetables or sides.
Notes
Substitute goat or blue cheese for tangy flavor.
Add sautéed mushrooms or spinach to filling.
Sear tenderloin before roasting for more flavor.
Serve with pan sauce, red wine reduction, or garlic butter.
Allow beef to rest before slicing to retain juices.
