Description

Street Corn Pasta Salad is a creamy and flavorful pasta salad inspired by street corn, perfect for summer picnics and gatherings.


Ingredients

8 oz rotini pasta

2 cups corn kernels

½ cup mayonnaise

¼ cup sour cream

1 teaspoon lime juice

½ teaspoon chili powder

¼ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

¼ cup chopped fresh cilantro

¼ cup crumbled cotija cheese (optional)


Instructions

1. Cook pasta and rinse under cold water

2. Cook corn if frozen or sauté fresh corn 3–4 minutes

3. Whisk together mayonnaise, sour cream, lime juice, chili powder, smoked paprika, salt, and pepper

4. Add pasta and corn to dressing and toss to coat

5. Stir in cilantro and cotija cheese

6. Chill at least 30 minutes before serving
