Description

Ingredients

2 cups all-purpose flour

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

1 cup mashed fresh strawberries

1/2 cup buttermilk

Frosting:

1/2 cup unsalted butter, softened

4 cups powdered sugar

1/4 cup mashed strawberries

1 tsp vanilla extract


Instructions

1. Preheat oven to 350°F and grease pan.

2. Whisk together flour, baking powder, baking soda, and salt.

3. Cream butter and sugar until light.

4. Beat in eggs and vanilla.

5. Mix in mashed strawberries.

6. Alternately add dry ingredients and buttermilk.

7. Pour into prepared pan and bake 30-35 minutes.

8. Cool completely.

9. Beat butter for frosting, add powdered sugar, mashed strawberries, and vanilla.

10. Spread frosting over cooled cake and garnish.

Notes

Use thawed frozen strawberries if fresh unavailable.

Add lemon juice to enhance flavor.

Fold in white chocolate or nuts for texture.

Substitute cream cheese frosting for tangy variation.
