Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter, melted
1 teaspoon vanilla extract
2 large eggs
1 ½ cups chopped rhubarb
1 cup chopped fresh strawberries
½ cup brown sugar (for topping)
3 tablespoons all-purpose flour (for topping)
2 tablespoons cold butter, cubed (for topping)
Instructions
1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch pan.
2. Mix flour, sugar, baking powder, and salt in a large bowl. Stir in melted butter, vanilla, and eggs until just combined.
3. Fold in chopped rhubarb and strawberries gently.
4. Pour batter into pan and smooth the top.
5. Mix brown sugar, flour, and cold butter for topping; crumble over batter.
6. Bake 35-40 minutes until golden; cool completely before cutting into bars.
Notes
Substitute or add berries for variety.
Store at room temperature for 3-4 days or freeze for 2 months.
