Strawberry Cheesecake Cookies are soft, chewy cookies with real strawberries and a creamy cheesecake swirl. Perfect for dessert, parties, or gifting.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup freeze-dried strawberries or fresh diced strawberries
8 oz cream cheese, softened
1/4 cup powdered sugar
Instructions
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in eggs and vanilla extract until combined.
4. Whisk together flour, baking powder, baking soda, and salt; gradually mix into wet ingredients.
5. Gently fold in strawberries.
6. Mix cream cheese and powdered sugar until smooth.
7. Drop cookie dough onto baking sheets and add a dollop of cream cheese mixture, swirling lightly.
8. Bake for 12–15 minutes until edges are set and slightly golden.
9. Cool on baking sheet 5 minutes, then transfer to wire rack to cool completely.
Notes
Use fresh, frozen, or freeze-dried strawberries for different textures. Optional: drizzle melted white chocolate on top. Store in airtight container to maintain softness.
