Description
Creamy strawberry cheesecake bars with a buttery graham cracker crust and fresh strawberry topping.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
16 oz cream cheese, softened
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1/4 cup sour cream
2 cups fresh strawberries, chopped
1/4 cup granulated sugar
1 tablespoon cornstarch
2 tablespoons water
Instructions
1. Preheat oven to 325°F and line a pan with parchment.
2. Mix crust ingredients and press into pan.
3. Bake crust 10 minutes.
4. Beat cream cheese and sugar until smooth.
5. Add eggs, vanilla, and sour cream.
6. Pour filling over crust and bake 35–40 minutes.
7. Cool and chill completely.
8. Cook strawberry topping until thickened and cool.
9. Spread topping over cheesecake and slice.
Notes
Use room-temperature cream cheese.
Chill bars before slicing.
Swap berries if desired.
Line pan for easy removal.
