Description

Spinach Artichoke Grilled Cheese is a melty, cheesy sandwich with creamy spinach and tender artichoke hearts. Perfect comfort food for lunch or dinner.


Ingredients

4 slices of bread (sourdough or your favorite)

1 cup fresh spinach, chopped

1/2 cup canned or cooked artichoke hearts, chopped

1 cup shredded mozzarella cheese

2 tablespoons cream cheese

1 tablespoon butter

1 teaspoon garlic powder

Salt and pepper, to taste


Instructions

1. Sauté spinach in a skillet over medium heat until wilted.

2. Add artichokes, cream cheese, garlic powder, salt, and pepper; stir until creamy.

3. Butter one side of each bread slice.

4. Place one slice, butter-side down, on the skillet.

5. Layer mozzarella, spinach-artichoke mixture, and remaining mozzarella.

6. Top with second bread slice, butter-side up.

7. Cook until golden brown and cheese melts, 3-4 minutes per side.

8. Slice and serve immediately.

Notes

Add Parmesan or Gruyère for extra cheesy flavor.

Serve with tomato soup for classic pairing.

Use gluten-free or whole-grain bread if desired.
