Description

Ingredients

1 large apple (Honeycrisp or Fuji), thinly sliced

½ cup dried cranberries

¼ cup crumbled feta cheese

¼ cup sliced almonds or pecans, toasted

3 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

1 teaspoon honey

Salt and black pepper to taste


Instructions

1. Whisk olive oil, vinegar, mustard, honey, salt, and pepper.

2. Add spinach, apples, cranberries, and nuts to a bowl.

3. Drizzle dressing and toss to coat evenly.

4. Top with crumbled feta before serving.
